This Farro Salad has been a favorite for years, naturally I had to make it at home.

The recipe is all over the internet but here are my notes:

1 cup Farro, 1 cup apple cider, 2 cups water, 2 teaspoons salt, bay leaves. Cook for 30 minutes until all liquid evaporated.

Let Farro cool then combine with the following in a large bowl:

*Big handful pistachios
*Torn basil and mint
*Chopped cherry tomatoes
*Chopped arugula
*Juice of 1 lemon
*Nice drizzle of excellent olive oil
*Shaved Parmesan cheese
*Pinch sea salt
*Sliced radishes & more herbs on top to serve

Bright, beautiful and delightfully fragrant from the herbs, balanced nicely with the nutty Farro. 🍃🍋🌾🍅🫒
