Chickpea & Cauliflower Coconut Curry

My latest curry craving almost had me ordering take out, but why do that when you can make fabulous vegetable curry in a snap at home? It is a great go-to dish when you want to impress someone, feed a crowd or just craving curry goodness.

Warning, this is a crazy addictive coconut curry! You can substitute vegetables and  proteins to your liking, but this combo is literally awesome sauce.

What is the magic ingredient? Store-bought curry paste. Most varieties have ingredients which you can only find at Asian Markets. Since most of us don’t have lemongrass, kaffir lime, and galangal laying around, this is a great way to achieve authentic flavors.

This recipe is healthy with the added indulgence of a creamy coconut sauce. The miracle of this decadence is that it is vegan and dairy free, despite its richness. It is one of my absolute favorite dishes to eat and just one of those perfect recipes that satisfies many a taste buds and preferences. 

It keeps well, so make a pot of it and you’ll have fabulous leftovers for a couple of lunches during the week.

We all have busy schedules and not having the time to prepare satisfying meals on the fly can be challenging. That’s why I’m a fan of utilizing beans, veggies and herbs along with basic pantry products to make a nutritious, colorful and tasty meal!

This filling and fancy tuna salad will do exactly that. And surprisingly, hummus is a great alternative to mayo!

Make this for a quick and satisfying lunch or dinner when you don’t have a lot of time.

It’s high in protein and flavor and quiet satisfying for a low calorie meal. The kick from the jalapeno gives this recipe a nice heat without being overpowering.

It can also be used as a dip with tortilla chips when entertaining, so it’s versatile.

Spice Crusted Chickpeas with Mint Yogurt Sauce

This is one of my favorite dishes to make. It is humble in its simplicity while simultaneously luxurious given the melange of spices. Mostly savory with a whisper of sweetness. The ginger, cumin and turmeric provide warmth and earthiness. The garlic and chilies add a nice heat. The walnuts provide just the right amount of textural contrast. The subtle sweetness of the cinnamon rounds all elements of earth, fire and nuttiness together… and for the finale- the coolness of the mint and yogurt balance our the entire dish. It’s a carnival for the taste buds!

Once upon a time, these spices were only available to royalty and the elite. They were a luxury for which wars were fought over and kingdoms were built or destroyed. Spices were used as currency in trade. These exotic flavors made their way from far away lands via the spice trade to the homes of nobility and were not nearly as accessible as they are to us today. These days all it takes is quick trip to the local supermarket to acquire the same riches.

That is why I entourage you to use spices. Many of us are afraid of using the ones we’re not familiar with. This recipe is a great way to dip your toe in the water! A can of chickpeas from your pantry and a combination of these spices makes a satisfying yet super healthy dish. The cool mint yogurt will balance the heat of the spices and your kitchen will smell divine!
